- 2 cups broccoli florets

- 1 cup long‑grain white rice
- rinsed
- 1½ cups low‑sodium chicken broth
- 1 cup shredded sharp cheddar cheese
- 1 medium onion
- finely diced
- 2 cloves garlic
- minced
- 2 tablespoons vegetable oil
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon freshly ground black pepper
- Optional: ½ cup smoked beef strips
Instructions
- Heat the vegetable oil in a large, deep skillet over medium heat.
- Add the diced onion and sauté for 3–4 minutes until translucent, then stir in the minced garlic and cook an additional 30 seconds.,Add the ground beef (or beef stew meat) to the skillet.
- Break it up with a wooden spoon and brown it for about 5–6 minutes, stirring occasionally, until the meat is fully cooked and no longer pink.
- Season with salt and pepper.,Stir in the rinsed rice, ensuring each grain is coated with the seasoned oil and meat juices.
- Cook for 1–2 minutes to toast the rice lightly.,Pour in the chicken broth, bring the mixture to a gentle boil, then reduce the heat to low.
- Cover the skillet and let it simmer for 12 minutes.,While the rice is cooking, steam or microwave the broccoli florets until they are just tender, about 3–4 minutes.
- Set aside.,After the rice has absorbed most of the liquid (about 12 minutes), gently fold the cooked broccoli into the skillet.
- Sprinkle the shredded cheddar cheese evenly over the top, cover again, and let it melt for 2–3 minutes.,If using smoked beef strips, stir them in now for a smoky finish.
- Taste and adjust seasoning if needed.,Remove the skillet from heat, let it rest for a minute, then serve hot directly from the pan.
- Garnish with a sprinkle of extra cheese or a drizzle of hot sauce if desired.

- Feel free to swap white rice for brown rice
