- 1 pound ground beef (80% lean)
- 12 ounces rotini pasta
- 1 cup cheddar cheese

- 1 cup cherry tomatoes
- halved
- 1/2 cup purple onion
- diced
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 2 tablespoons mustard (yellow or Dijon)
- 1 tablespoon apple cider vinegar
- Salt and freshly ground black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the rotini and cook until al dente, about 8–10 minutes. Drain and rinse with cold water; set aside to cool.,While the pasta cooks, heat a skillet over medium heat. Add the ground beef, breaking it up with a spatula. Cook until browned, 6–8 minutes. Drain excess fat and season with salt and pepper. Let cool slightly.,In a large mixing bowl, whisk together mayonnaise, ketchup, mustard, and apple cider vinegar until smooth. Adjust seasoning with a pinch of salt or pepper if needed.,Add the cooled rotini, browned beef, shredded cheddar, halved cherry tomatoes, and diced purple onion to the bowl with the sauce. Toss gently until everything is evenly coated.,Cover and refrigerate for at least 30 minutes. Before serving, give the salad a quick stir, taste for final seasoning, and garnish with extra tomato halves or a sprinkle of cheese if desired.
