Serve with warm tortilla chips or crusty bread for crunch, and keep leftovers three days!!

Ingredients

Scale
  • 1 lb ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned, about 5‑7 minutes. Drain excess fat.
  2. Add the diced onion and cook 2‑3 minutes until translucent, then add the minced garlic and cook 30 seconds.
  3. Sprinkle chili powder, cumin, salt, and pepper over the mixture and stir for about 1 minute to toast the spices.
  4. Add the diced tomatoes with their juices, kidney beans, corn, and beef broth. Bring to a gentle boil, then reduce to a simmer.
  5. Simmer uncovered for 10‑12 minutes to meld flavors. Reduce heat to low and slowly stir in the heavy cream, heating through without boiling.
  6. Ladle into bowls and garnish with shredded cheese, sour cream, and cilantro if desired.
