Instructions
- Bring a large pot of salted water to a boil, add the pappardelle, and cook until al dente, about 8–10 minutes. Drain, reserving 1 cup of pasta water.
- While the pasta cooks, melt 1 tablespoon butter in a large skillet over medium‑high heat. Add the sliced beef steak, season with salt and pepper, and sear until browned, 3–4 minutes. Transfer the beef to a plate.
- In the same skillet, melt the remaining 1 tablespoon butter. Add the sliced mushrooms and sauté until they release moisture and turn golden, about 5 minutes.
- Reduce heat to medium. Pour in the heavy cream and beef broth, stirring constantly. Simmer gently for 3–5 minutes until the sauce thickens; if it becomes too thick, stir in a splash of the reserved pasta water.
- Return the seared beef to the skillet, mixing it into the sauce. Add the cooked pappardelle and toss until every ribbon is evenly coated. Adjust seasoning with additional salt and pepper if needed.
- Remove from heat, sprinkle chopped parsley on top, and serve immediately.
