  • 2 medium onions, sliced thin
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 cup shredded mozzarella cheese

Instructions

  1. Combine ground beef, breadcrumbs, grated Parmesan, egg, parsley, garlic powder, onion powder, and salt in a large bowl. Mix until just combined.
  2. Form the mixture into 1‑inch meatballs.
  3. Place the sliced onions in the bottom of the crock‑pot.
  4. Arrange the meatballs on top of the onions.
  5. Whisk together beef broth, Worcestershire sauce, and dried thyme; pour over the meatballs and onions.
  6. Cover and cook on low for 6‑8 hours (or on high for 3‑4 hours) until the meatballs are cooked through and the broth has thickened slightly.
  7. Ten minutes before serving, sprinkle shredded mozzarella over the meatballs, replace the lid, and let the cheese melt.
  8. Serve hot, optionally with buttered noodles, mashed potatoes, or crusty bread.

Notes

  • For a richer sauce
  • remove the lid during the last 30 minutes to reduce the broth. If the broth is too thin
  • stir in a tablespoon of butter before serving.
