  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 medium onion, diced
  • 1 cup frozen mixed vegetables
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Brown ground beef in a large skillet over medium heat; drain excess fat.
  3. Add diced onion and minced garlic; cook until translucent.
  4. Stir in beef broth, rice, mixed vegetables, salt, garlic powder, onion powder, paprika, and black pepper; bring to a boil.
  5. Reduce heat, cover, and simmer 20 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat; stir in half of the shredded cheese until melted.
