Ingredients

  • 1 lb ground beef or ground turkey
  • 1 lb potatoes
  • peeled and diced into ½‑inch cubes
  • 1 medium onion
  • finely chopped
  • 2 cloves garlic
  • minced
  • 2 medium carrots
  • peeled and diced
  • ½ cup frozen peas (optional)
  • 1 cup low‑sodium chicken broth
  • ½ cup heavy cream
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 Tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and freshly ground black pepper
  • to taste

Instructions

  1. Prepare the ingredients: dice potatoes, chop onion, mince garlic, and dice carrots. Measure broth, cream, and cheese.,Brown the meat: heat 1 Tbsp olive oil in a large skillet over medium‑high heat. Add ground meat, season with salt, pepper, and smoked paprika, and cook until fully browned, about 5‑6 minutes. Transfer meat to a bowl.,Sauté the aromatics: add remaining olive oil if needed, reduce heat to medium, add onion and cook until translucent, about 3 minutes. Add garlic and carrots; sauté 2 minutes.,Cook the potatoes: add diced potatoes, season with salt and pepper, let sit without stirring for 2‑3 minutes to brown, then stir and continue cooking 5‑6 minutes until they begin to soften.,Deglaze the pan: pour chicken broth over potatoes and vegetables, scraping browned bits from the bottom. Simmer 2‑3 minutes.,Combine meat and sauce: return browned meat to the skillet, stir in heavy cream, and simmer gently 3‑4 minutes until sauce thickens.,Add cheese and peas: sprinkle shredded cheese and stir until melted. Add frozen peas, if using, and heat through.,Finish and serve: taste and adjust seasoning, remove from heat, let rest 1 minute, then serve hot.
