Hearty Beef Stew with Cheddar Herb Dumplings is an easy, comforting one‑pot meal featuring tender smoked beef, vegetables, and fluffy cheddar herb dumplings. Perfect for family dinners, this recipe combines savory broth, aromatic herbs, and cheesy dumplings for a satisfying, hearty dish that warms the soul.

Ingredients

Scale
  • 2 pounds smoked beef, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add smoked beef cubes and brown on all sides.
  2. Add onion and garlic; cook until softened and fragrant.
  3. Stir in carrots, potatoes, thyme, rosemary, salt, and pepper; coat vegetables with the aromatics.
  4. Pour in beef broth, bring to a gentle boil, then reduce heat and simmer, covered, for 1.5 hours until beef is tender.
  5. In a bowl, mix flour, baking powder, shredded cheddar cheese, milk, and chopped parsley to form a soft dough.
  6. Drop spoonfuls of the dumpling dough onto the surface of the simmering stew, cover, and cook for 15 minutes until dumplings are puffed and cooked through.
  7. Taste the stew, adjust seasoning if needed, and serve hot, garnished with additional fresh parsley.

Notes

  • For extra flavor, brown the beef in batches to avoid steaming. Keep the dumpling batter chilled until dropped into the stew. Adjust seasoning at the end of cooking. Nutrition is approximate
