  • 1 lb beef pepperoni

  • 1 can kidney beans
  • drained and rinsed
  • 1 can black beans
  • drained and rinsed
  • 1 can corn
  • drained
  • 1 large onion
  • chopped
  • 2 cloves garlic
  • minced
  • 2 cups beef broth
  • 2 cups diced tomatoes
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, stirring until the onion becomes translucent and the garlic is fragrant, about three minutes.
  2. Add the ground beef and sliced beef pepperoni to the pot. Cook, breaking up the ground beef with a spoon, until the meat is fully browned and any liquid has evaporated, roughly five minutes.
  3. Stir in the diced tomatoes, kidney beans, black beans, and corn. Sprinkle the chili powder, cumin, salt, and pepper over the mixture, ensuring an even distribution of spices.
  4. Pour the beef broth into the pot, scraping any browned bits from the bottom. Bring the mixture to a rolling boil, then reduce the heat to a gentle simmer.
  5. Allow the stew to simmer uncovered for 30 minutes, stirring occasionally.
  6. Taste the stew and adjust seasoning with additional salt or pepper if needed. Ladle the hot stew into bowls, garnish with fresh cilantro if desired, and serve immediately.
