  • 12 oz rotini noodles
  • 1 lb ground smoked beef
  • 1 cup sweet corn, drained
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1 cup grape juice
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook rotini until al dente, about 8‑10 minutes, then drain.
  3. Melt butter in a large skillet over medium heat, add the ground smoked beef and brown for 5‑7 minutes; season with salt and pepper.
  4. Stir the ranch seasoning mix into the browned beef, pour in the grape juice, and simmer for about 5 minutes.
  5. Add the drained sweet corn to the skillet and mix until evenly coated.
  6. In a large mixing bowl combine the cooked rotini, the beef‑corn sauce, and half of the shredded cheddar cheese; toss gently.
