  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 bell pepper (diced)

  • 1/4 cup feta cheese (crumbled)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice

Instructions

  2. While the beef cooks, chop the cherry tomatoes, cucumber, bell pepper, and red onion, then place them in a large mixing bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, a pinch of salt, and a dash of pepper to create the dressing.
