  • 1 pound ground beef
  • 1 cup uncooked rice
  • 1 (14.5‑oz) can diced tomatoes
  • 1 cup beef broth
  • 1 cup grape juice
  • 1 cup corn (frozen or canned)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium heat; cook 5–7 minutes until fully browned, then drain excess fat.
  2. Add the chopped onion, bell pepper, and minced garlic; sauté 3–4 minutes until vegetables soften and onion becomes translucent.
  3. Sprinkle the uncooked rice over the mixture, then pour in the diced tomatoes, beef broth, grape juice, and corn; stir gently to combine.
  4. Add chili powder, cumin, and a pinch of salt and pepper; mix well so spices coat everything evenly.
  5. Bring the mixture to a rolling boil, then reduce heat to low, cover, and simmer 20–25 minutes until the rice is tender and liquid is absorbed.
  6. Remove from heat, keep covered, and let stand 5 minutes. Fluff with a fork and garnish with fresh cilantro if desired.

Notes

  • For extra heat
