Stir until smooth; set aside for later thickening.,Heat 2 Tbsp vegetable oil in a large skillet over medium‑high heat. Add the ground beef, breaking it up with a spatula. Cook 5–6 minutes, until the meat loses its pink color and begins to develop a light crust. Drain excess fat if necessary.,Reduce heat to medium. Stir in the minced garlic, grated ginger, and the white parts of the sliced green onions. Sauté 30 seconds to 1 minute, just until fragrant.,Pour in the soy sauce, brown sugar, and ¼ cup water or broth. Stir to dissolve the sugar. Add red pepper flakes if using.,Give the cornstarch slurry a quick stir and pour it into the skillet. Cook, stirring constantly, for 1–2 minutes until the sauce becomes glossy and coats the beef.,Add the cooked noodles to the skillet. Toss gently to ensure every strand is coated with the sauce and mixed with the beef. Drizzle the sesame oil over the top and give one final toss.,Sprinkle the green parts of the sliced green onions over the dish.
