  • 1 pound ground beef
  • 2 medium sweet potatoes, diced
  • 1 (15‑ounce) can black beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add the diced sweet potatoes and cook, stirring occasionally, for 8‑10 minutes until softened and lightly browned.
  2. Add the diced onion and sauté for 2‑3 minutes until translucent. Add the minced garlic and cook for about 1 minute, being careful not to let it burn.
  3. Push the vegetables to the sides of the pan, add the ground beef to the center, and break it up with a spatula. Cook until fully browned, about 5‑6 minutes, and any liquid has evaporated.
  4. Stir in the drained black beans, chili powder, cumin, paprika, salt, and pepper. Mix well and let the mixture simmer for an additional 5 minutes so the flavors meld.
  5. Turn off the heat, taste and adjust seasoning if needed, then garnish with fresh cilantro (optional) and serve warm.
